How to make the most perfect Chai Tea

Let me tell you. There is nothing better than to be sitting in your home, sipping chai and look out into the Mumbai rainfall. Aaah...... Sorry, must have drifted off. Anyways, lets get into it.
In other countries, I'm told that you use teabags to make chai. And add a lot of spices into it. But many don't like so many spices. So mine is easy and quick.
I use Chai powder which I'm sure you'll find at an Indian market. More specifically, Society brand tea powder. Its damn yumm and I use it all the time.



Makes chai for 5 people

2 cups + 3 tbsp water
5 tsp  large granulated sugar
2 1/2 tbsp tea powder
2 lemongrass strands
Milk to taste


1) Add water, sugar, tea powder and lemongrass in a pot and boil.
2) Strain the tea and add it into teacups such that each cup is only 1/4th full.
3) Add milk. Now some people put very little milk and some put a lot of milk to the brim. Now, I suggest you put milk so that 3/4th of the cup is filled. Mix with a spoon and enjoy!
